Rainbow...


Last year for christmas I made my grandmother and PRH's grandmother a variety of soups. This year I went the sweet route and made these cupcakes. I used Martha's recipe for spiced cupcakes with citrus glaze (from the December 2010 issue of Everyday Food) and they turned out great. I made a batch a few weeks ago to test how well they would freeze; not only did they freeze well, but they were super tasty...and so pretty! I think we should cover everything in rainbow glaze.

It's cute how some of the glaze colors match the colors in the design on the tin. I love giving gifts in Christmas tins.

YES! Everything in a rainbow glaze! One of my New Year's manifesto to-do's was to make everything more rainbow...must make cupcakes now.

Erin- you are SO right. It is awesome.

I made the glaze with lemon juice and powdered sugar until it was the right consistency. I made it a bit thicker than the recipe called for and then scooped out small increments and added tons of food coloring. Just a tiny drop for the first color and then more and more drops until the color was vivid. I did freeze the cupcakes WITH glaze on and they thawed really well. :)
