Well, it's not exactly a project, but just something I read about on younghouselove - next time my husband and I head off to faraway places, I intend to write and send myself a postcard every day of the trip, just rambling about weather, lodging, food, whatever. And then keep them somewhere accessible so that I can re-live, and share....
I like knitting the family's next-winter scarves w/ chunky or semi-chunky yarn on long road trips...nothing complicated, no counting stitches--just pretty yarn and knit, knit, knit! Alternate that w/reading something aloud--To Kill a Mockingbird? A Walk in the Woods? Babies and toddlers will listen to just about anything as long as you're reading it. You can check out large-print versions of whatever you like at the library to make the reading-while-in-motion thing easier. Have fun!
